Confetti Cake Recipe
Ingredients

cup unsalted butter, room temperature

cup vegetable oil

cup buttermilk, room temperature

cup rainbow sprinkles

cups unsalted butter, softened

cups confectioners' sugar, sifted

tablespoons heavy whipping cream
2
teaspoons clear vanilla extract
Preheat
oven to 350°. In a large bowl, cream butter, oil and sugar until light and
fluffy, about 5 minutes. Add eggs, then egg whites, 1 at a time, beating well
after each addition. Beat in vanilla. In another bowl, whisk flour, baking
powder and salt; add to creamed mixture alternately with buttermilk, beating
well after each addition. Fold in sprinkles.
Transfer
to a lightly greased 13x9-in. baking pan. Bake until a toothpick inserted in
center comes out clean, 35-40 minutes. Cool completely on wire racks.
For
buttercream, in a large bowl, beat butter until creamy. Gradually beat in
confectioners’ sugar until smooth. Add cream, vanilla and food coloring. Beat
until light and fluffy, 5-7 minutes. Frost top of cake with frosting and top
with additional sprinkles if desired.
